Enchiladas de Espinacas (Spinach)

Spinach sauteed wuth mushroom, onions, tomatoes, corn, cilantro, and jalapeños rolled into two corn tortillas and smothered with mushroom cream sauce. Topped with monterey jack cheese and served rice, whole beans and sour cream.
